Step 1: Place the pineapple in the food processor.
Step 2: In a bowl, mix together the coconut milk, sugar and coconut extract until sugar is completely dissolved.
Step 3: With food processor running, pour the coconut milk mixture in the spout and process a few seconds, until mixture starts to thicken.
Step 4: Pour into a plastic container, cover and freeze overnight.
Step 5: To make drink: Scoop out 1 cup of the mixture.
Step 6: Place in a blender with 1/2 cup milk and liquefy.
Step 7: Pour in a glass and add 1 ounce coconut rum.
