"Use under-ripe green tomatoes for this, not the ripe green heirloom varieties. You can use ordinary corn meal in this but it will have a grittier texture. You can find corn masa in Mexican Tiendas or grocery stores."

Step by Step Method
Step 1
Slice tomatoes thinly.
Step 2
Arrange four bowls big enough to dip tomato slices in at your work station.
Step 3
Fill bowls with buttermilk, flour, egg, and masa.
Step 4
Season flour and masa with sal, pepper and/or cajun seasoning as you like.
Step 5
Heat about 1/2 inch oil in a large skillet.
Step 6
Dip tomato slices one at a time, first into buttermilk, then into seasoned flour, then into egg, then into corn masa.
Step 7
Place coated tomato slice into the hot oil and cook about 1-2 minutes per side, until golden, then drain on paper toweling. Season again with salt, pepper and/or cajun seasoning if you like; serve with hot sauce.
Step 8
Continue with the other tomato slices, doing several at a time but be careful not to overcrowd the pan.
Step 9
You may need extra of any of the ingredients depending on your tomatoes size, or how much get used at random.
