"I had some left over fingerling potatoes and decided to fry them up...this is what I came up with...hope you enjoy."

Step by Step Method

Step 1

Bring a large pot of water to a boil. Add the potatoes and cook for about 10-12 minutes, or until fork tender (do not overcook). Drain and rinse under cool water to stop the cooking process. Pat dry.

Step 2

Meanwhile heat a cast iron pan over medium-high heat. Add the bacon and cook until desired crisp, about 10 minutes. Remove from pan leaving the bacon grease for frying the potatoes.

Step 3

Add the potatoes and season with rosemary, sage, salt and pepper. Cook for 20 minutes, stirring occasionally. You want a nice golden brown color to them.

Step 4

Stir in bacon and garlic. Cook for a couple of minutes or until garlic is nice and aromatic.

This is a good potato dish. Our potatoes turned out to be too big. We didn't cut them down. The garlic and rosemary were great.

I made this about a week ago and forgot to post the review! Some of my fingerlings were larger than others so I just cut them so they would be equal in size. This turned out to be delicious and I will definitely make it again. A real kid pleaser! Made for First Time Tag game.
