Step by Step Method

Step 1

Add butter, onions and bell peppers to a frying pan over medium heat. Saute until cooked and soft.

Step 2

Add corn and spices and continue to fry. Keep frying until the veggies carmelize. This will take about 20 minutes. (stir often)

I would like to say that I invented this dish last night until I reread your recipe this morning, Dissie. Either great minds work alike -- or I was remembering your dish -- so it needs a review that was as good as the dish was. We used green onions, corn fresh from the cob, kosher salt and no cayenne, all combined and sauteed at once until crisp tender instead of caramelizing it. It was outstanding. Thanks for posting such a colorful and satisfying combination of flavors.
