Step by Step Method

Step 1

Line colander with 4 layers of cheesecloth and set in sink. Bring milk and salt to simmer in a large saucepan over medium high heat. Stir in lemon juice. Let simmer until curds form (only a few minutes).

Step 2

Using a slotted spoon or skimmer scoop curds from pan and transit to cheesecloth-lined colander. Let drain for 1 minute. Transfer curds to medium bowl; cover and chill until cold (3 hours).
