Fresh Figs with Goats cheese and orange
"Recipe source: Cypriana cookbook. If you buy pre-cooked lentils there is no cooking for this salad. Puy lentils are mentioned but I think any precooked lentils will work. Recipe also mentions goat's curd but goat's cheese is easier to come by."

Step by Step Method
Step 1
Drizzle olive oil over the lentils to help break up any clumps.
Step 2
Cut 12 segments from the orange and set side -- save remainder of orange for dressing.
Step 3
In a bowl combine lentils, salad leaves and the herbs; toss with some olive oil and reserved orange and a some lemon juice along with salt and pepper.
Step 4
To plate up the salad: in a serving dish scatter the chicory leaves and shake off excess dressing from salad and add to the chicory leaves; placing the orange segments around the salad.
Step 5
Cut figs in half or quarters depending on their size and place them on top of the salad and then scatter the goat's cheese over all.
Step 6
Top with some hazelnuts and drizzle some honey over all.
