Step 1

Mix together marinade ingredients in a large bowl. Marinate salmon portions in the refrigerator for 30 to 60 minutes.

Step 2

In a large oven-proof skillet, heat oil over medium-high heat. Pan-sear salmon on both sides, about 2 to 3 minutes on each side, until crispy. Preheat oven to 400°F. Transfer pan to oven and finish cooking through, about 5 minutes. (recommended internal temperature is 145°F). Garnish with chopped chives.

Wow, that marinade is amazing! Made exactly as written, but cut the recipe in half. The marinade is so, so tasty, and very spicy. However, it's not very spicy at all after cooking the salmon. I made this in a small cast iron pan, so the salmon was nicely seared. Next time, I'll brush some of the marinade on it right before popping it in the oven, so hopefully get a thicker and more tasty (meaning SPICY!) glaze on it. LOVE, LOVE, LOVE!!! (Afternote: as happens more times than I care to admit, I forgot to sprinkle the chives before taking a photo. My bad...)
