Step by Step Method

Step 1

Heat oil in a large pot, and sauté garlic over medium heat.

Step 2

Season chicken with salt and Five Spice Powder (or adobo seasoning). Add chicken to the pot and cook until lightly browned on at least two sides of each piece, about 2 minutes on each side.

Step 3

Add the bay leaves, onion, soy sauce, vinegar, and black peppercorns. Mix together.

Step 4

Keep pot covered, stirring occasionally, and cook for about 15 minutes.

Step 5

Add lemongrass, curry powder, and coconut milk and mix.

Step 6

Reduce heat to simmer for another 10 to 15 minutes, uncovered, stirring occasionally. Remove lemongrass and bay leaves before serving with hot sticky rice.

This was so good! I was a little unsure about cooking the chicken in soy sauce and apple cider vinegar but am glad I trusted in the experience. The chicken had great flavor which really picked up on that 5 spice seasoning. This was great served over jasmine rice. Thank you!

Awesome flavor! I halved the recipe and the seasoning along with the coconut milk was amazing. Loved it and will definitely make this dish again.

Ten stars! Like Mike, I also worked with Filipinas and adobo was frequently (if not always) at our potlucks. This was simply delicious! I'm not a salt fan, so it was great to be able to tweak a little to lessen the sodium - I only used half the soy sauce and doubled the lemongrass. This smelled SO SO good while cooking and the flavor is amazing. Like Mike, I also used all chicken thighs. Glad for the leftovers! Thanks for sharing this - going into my Best Of file right away!

The last ten years that I worked before retiring I worked with 5 Filipinas. We would have potlucks every couple of months and I had some amazing food. Chicken (and pork) adobo was always brought from someone, and I collected several recipes. I have made them often, but this is really one of the best. I loved the 5 Spice and the addition of the coconut milk. I used all thighs. This will be my go-to recipe from now on.

We enjoyed this curry over rice. We used 1 chicken cut into pieces (I did remove some of the bones after cooking) and used the Five Spice Powder option. Delicious and easy--the hardest part was cutting up the chicken! Thanks for sharing!
