"These are healthy and fat free but they aren’t rubbery or weird like some fat free muffins are, they have great flavor too. They bake out quite high, and thanks to all the fiber and pineapple, only have about 150 calories each, 4.8 grams of protein and almost 5 grams fiber. Not bad for a muffin, so go ahead and have a couple!"

Step by Step Method
Step 1
Preheat oven to 350 degrees F. Line 12 muffin cups with paper liners.
Step 2
Combine pastry flour, baking powder and salt in a bowl and stir very well to mix.
Step 3
Combine milk, wheat bran, brown sugar, undrained pineapple and vanilla in a large bowl and let sit for 15 minutes.
Step 4
With a mixing spoon, beat egg whites into bran mixture. Add flour mixture and stir until incorporated. Using a spoon mix in raisins.
Step 5
Divide batter evenly among muffin cups and bake for 18-20 minutes
