The ingredients are:
  • 1 1/2 cups pasty flour (whole wheat pastry flour)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups fat-free milk (or use 1%)
  • 1 1/2 cups wheat bran
  • 3/4 to 1 cup packed brown sugar
  • 1 can (8 ounce) crushed pineapple (don't drain the juice!)
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 1/2 cup raisins (or more)

How to Make

  • Step 1: Preheat oven to 350 degrees F. Line 12 muffin cups with paper liners.

  • Step 2: Combine pastry flour, baking powder and salt in a bowl and stir very well to mix.

  • Step 3: Combine milk, wheat bran, brown sugar, undrained pineapple and vanilla in a large bowl and let sit for 15 minutes.

  • Step 4: With a mixing spoon, beat egg whites into bran mixture. Add flour mixture and stir until incorporated. Using a spoon mix in raisins.

  • Step 5: Divide batter evenly among muffin cups and bake for 18-20 minutes
