Step 1: Preheat oven to 350 degrees F. Line 12 muffin cups with paper liners.
Step 2: Combine pastry flour, baking powder and salt in a bowl and stir very well to mix.
Step 3: Combine milk, wheat bran, brown sugar, undrained pineapple and vanilla in a large bowl and let sit for 15 minutes.
Step 4: With a mixing spoon, beat egg whites into bran mixture. Add flour mixture and stir until incorporated. Using a spoon mix in raisins.
Step 5: Divide batter evenly among muffin cups and bake for 18-20 minutes
