"One of many yummy avocado recipes from Avocados from Mexico. If I don't have corn on the cob to roast, I pan-roast some frozen corn. Adds about 10 minutes to prep time."

Step by Step Method
Step 1
In a medium bowl, fold mashed avocado, roasted corn, cotija cheese, poblano pepper, and 2 teaspoons of Tajin Seasoning until all ingredients are evenly combined.
Step 2
To Serve immediately – Put Guac into a serving vessel and garnish with .5 teaspoon of Tajin Seasoning and a drizzle of 1 Tablespoon of crema.
Step 3
To Hold and Serve Later- Transfer to holding container and press plastic wrap to the surface of the guacamole. Keep in the refrigerator until ready for use.
