In double boiler melt 1 tablespoon butter

Add 1/2&1/2

Bring to a simmer

It was a case of breakfast for dinner and as I am eating no to low carb I served 2 eggs over baby rocket and sauted mushrooms on the side. I cooked the eggs in 2% fat milk in a small frypan as I was going to mix milk with cream to make half and half (we can't buy it here) but we were out of cream and they came out beautiful with soft runny yolks which left me wanting that toast cut into soldiers to mop up that golden soft yolk.
