Step by Step Method

Step 1

Heat 1 tablespoon butter. Fry eggs in rings in butter. Cover to steam them

Step 2

Toast the muffins then butter lightly. Heat on grill

Step 3

When heating add cheese to bottom

Step 4

Fry bacon

Step 5

FOR PLATING: Add bacon to cheese. Add egg

So yummy...I fried up the Canadian bacon along side of the eggs...(made 2 servings)...once they were cooked I topped the egg with the bacon and a slice of cheese...I removed the pan from the stove and put a lid on the pan to help the cheese melt...I toasted my English muffin...(100 cal. multi grain)...and instead of using butter I used mayo...yummy breakfast...made for WOTM tag game...

Daily Inspiration

Made these delicious egg muffins this morning for breakfast. We couldn't find canadian bacon and while we did have ham -- I elected to use bacon. I fried the eggs over easy and added cheese. Boy, were these good! Awesome breakfast and one I'll make again with canadian bacon if I can find it. : )

Home made much better than fast food ones! Mine looks very sloppy because I used 2 eggs. Really enjoyed for my Sunday Brunch

I scaled back for one serve and thoroughly enjoyed as breakfast, I did use all the ingredients but cooked it up a little differently than posted in that I toasted my muffin in the toaster and fried up the bacon and egg in the frypan and when I assembled I buttered the muffin put the bacon on the bottom and gave it a little squirt of bbq sauce and then topped with the egg and lastly the cheese which began to melt with the heat from the egg and bacon. I was aiming for a sunny side up egg but unfortunately the yolk broke but still enjoyed. Thank you dienia b made for For Your Consideration tag game at FF&F.
