Egg & Avocado Breakfast Flatbread

"Siggi & I host a family brunch twice monthly, so I am always looking for tasty options to keep our menu new & fresh. This recipe by Kristen @ Dine & Dish is my latest find. It is untried at this time & I admit to minor tweaks here & there to suit our taste preferences. I expect it to be popular w/our family. I hope you agree & will give it a try. ENJOY!"

Step 1

Preheat oven to 375°F. Place flatbread on a cookie sheet. Drizzle w/olive oil & sprinkle w/sea salt. Bake for 8 min or until slightly toasted.

Step 2

While flatbread is cooking, coarsely mash the avocado & red pepper flakes. Then spread the mashed avocado mixture over the cooked flatbread almost to the edges. Set aside.

Step 3

Quickly cook the eggs per your choice of over-easy or basted.

Step 4

Top flatbread w/thin-sliced tomatoes & fried (or basted) eggs. Sprinkle w/sea salt & fresh grd black pepper to taste & serve warm.

NOTE - As alternatives to drizzling the olive oil, use a pastry brush to brush the oil evenly over the flatbreads .. OR .. Simply pan-grill the flatbreads in butter until nicely browned w/crisp edges. This method will of course chg the nutritional data

SERVING SUGGESTIONS: While this can be served as written, it can also be expanded to a hearty brunch option by including sides of bacon, sausage or fruit.

This was a real treat. I used a 6" Naan lightly heated in the oven. Made an almost quacamole with the avocado and fried the eggs so the centers were still a bit runny. This really tickled my taste buds. Looks attractive and tastes wonderful. Will be on the Sunday Brunch menu again. 29 January Another great Sunday Brunch. I used a "Flatout" flatbread. Warmed it ,folded in the toaster & sliced the avocado, sprinkled chili flakes on top Mmmmmmm

Very yummy recipe my twisted sister. This lovely recipe was quick and easy to make with delicious results. I loved this messy, flavorful flatbread sandwich. I served mine open faced, used a variety of heirloom cherry tomatoes. Great flavor and textures in this breakfast treat. The avocado is creamy and works beautifully with the fried egg and tomatoes. Thank you for sharing a recipe that I will enjoy again and again. Made FYC Tag Game.

I scaled this back for 1 but as my eggs were small I used two and well what is there not to love and enjoy from the crispy flatbread through to the creamy avocado and sweet tomatoes freshly picked from the garden to that runny egg yolk which made for a delicious sauce and oh those silky eggs, thank you twissis for one of the best breakfasts I have this year, made for Alphabet Soup tag game.
