Easy Pierogi Lasagna

"Use instant mashed potatoes. Can add cooked bacon, sauerkraut, cottage cheese and/or smoked sausage. This is a good Lent dish or a meatless Monday casserole."

Step by Step Method
Step 1
Cook lasagna noodles in heavily salted boiling water until al dente.
Step 2
Drain and set aside.
Step 3
Preheat oven to 375 degrees.
Step 4
Spray a 13"x 9" baking dish with cooking spray.
Step 5
Melt butter in large skillet over medium heat.
Step 6
Saute onions with a little salt and pepper until soft and lightly browned, about 8 minutes.
Step 7
Stir onion mixture and 1 cup of the cheese into the mashed potatoes.
Step 8
Add more pepper to the potato mixture to taste.
Step 9
Spread 4 of the lasagna noodles on the bottom of casserole dish and top with 1/2 of the potato mixture.
Step 10
Repeat with another layer of lasagna noodles and mashed potatoes mixture and place final 4 lasagna noodles on top.
Step 11
Sprinkle reserved cheese on top.
Step 12
Cover baking dish with foil and bake 35 minutes or until heated through.
