Ingredients

The ingredients are:
  • 8 ounces dry lasagna noodles
  • 6 cups water, boiling
  • 1 teaspoon salt
  • 16 ounces sharp cheddar cheese, divided, (2 cups)
  • 1/2 cup butter
  • 3 cups onions, diced
  • 1 teaspoon salt
  • 1 teaspoon pepper, to taste
  • 6 cups mashed potatoes, warm

How to Make

  • Step 1: Cook lasagna noodles in heavily salted boiling water until al dente.

  • Step 2: Drain and set aside.

  • Step 3: Preheat oven to 375 degrees.

  • Step 4: Spray a 13"x 9" baking dish with cooking spray.

  • Step 5: Melt butter in large skillet over medium heat.

  • Step 6: Saute onions with a little salt and pepper until soft and lightly browned, about 8 minutes.

  • Step 7: Stir onion mixture and 1 cup of the cheese into the mashed potatoes.

  • Step 8: Add more pepper to the potato mixture to taste.

  • Step 9: Spread 4 of the lasagna noodles on the bottom of casserole dish and top with 1/2 of the potato mixture.

  • Step 10: Repeat with another layer of lasagna noodles and mashed potatoes mixture and place final 4 lasagna noodles on top.

  • Step 11: Sprinkle reserved cheese on top.

  • Step 12: Cover baking dish with foil and bake 35 minutes or until heated through.
