Easy - Five Ingredient - 15 Minute Fresh Tomato Sauce

"This is best and easiest tomato sauce to serve with pasta. Five (5) ingredients and just 15 minutes is all you need. I happen to love to serve this over Bucatini pasta; which is a 'spaghetti like' pasta which is hollow. If you like a little spice, a pinch of red pepper flakes can be used. If you want, you can top this with grated parmesan or creamy ricotta. To make it even healthier ... you can use a NON-egg pasta of tofu pasta."

Step 1

Sauce ... Add the olive oil to a pan and bring to medium heat. Add the garlic, onion, and (optional red pepper flakes), Cook 1 minute and then add the tomatoes. Simmer approximately 15 minutes. You want the tomatoes to break down a bit, but still be a bit chunky. This is a fresh rustic sauce; not a 'saucy' type of sauce.

Step 2

Pasta ... As the sauce cooks, cook the pasta according to package directions in plenty of salted water. Drain well and add to the sauce. Toss well, then add the basil and serve. ENJOY! You can garnish with fresh parmesan, a spoon of fresh ricotta, or cubed fresh mozarella if you want. ENJOY! It's just a nice change from a heavier sauce type of recipe.

We loved this freshly made sauce. It came in so handy to make a quick meal from the garden. I blanched my tomatoes, then skinned them and they were ready to go. I added fresh spinach and hit it with a good squeeze of lemon when cooking, and a few spoonfuls of fresh parmesan on top right before eating. Super flavors!
