Ingredients

The ingredients are:
  • SAUCE
  • 6 to 8 tomatoes (plum tomatoes, cut in quarters)
  • 1 small onion, diced fine
  • 1 to 2 teaspoons fresh garlic, minced
  • 4 to 6 basil leaves, torn (more or less to taste)
  • 1 tablespoon oil (olive oil)
  • Pinch red pepper flakes (optional)
  • Salt and pepper to taste
  • PASTA
  • 1/2 pound pasta, dry (bucatini pasta, spaghetti is a good substitute)
  • OPTIONAL GARNISH
  • Parmesan cheese grated
  • Fresh ricotta
  • Fresh mozarella,cubed

How to Make

  • Step 1: Sauce ... Add the olive oil to a pan and bring to medium heat. Add the garlic, onion, and (optional red pepper flakes), Cook 1 minute and then add the tomatoes. Simmer approximately 15 minutes. You want the tomatoes to break down a bit, but still be a bit chunky. This is a fresh rustic sauce; not a 'saucy' type of sauce.

  • Step 2: Pasta ... As the sauce cooks, cook the pasta according to package directions in plenty of salted water. Drain well and add to the sauce. Toss well, then add the basil and serve. ENJOY! You can garnish with fresh parmesan, a spoon of fresh ricotta, or cubed fresh mozarella if you want. ENJOY! It's just a nice change from a heavier sauce type of recipe.
