Step by Step Method

Step 1

Preheat the oven to 375F.

Step 2

Lightly grease a 8 inch round springform cake tine.

Step 3

Peel and core the apples, cut one of the apples into quarters lengthways, then thinly slice the quarters vertically and set aside and dice the remaining apples and set aside.

Step 4

Sift together the flour and baking powder into a large bowl and add the butter and rub it in with your fingertips until the mixture resembles breadcrumbs (alternatively use a food processor and then put mixture into a large bowl).

Step 5

Add the sugar, diced apples, lemon rind and eggs to the flour mixture and mix to a firm dough and put into the prepared tin and prick several times with a fork and decorate the top of the cake with the apple slices.

Step 6

Bake in the preheated oven for 40 minutes.

Step 7

Remove from the oven and leave to cool for 1 to 2 minutes and then unclip and remove the sides, leaving the cake on the base of the tin, then transfer to a wire rack to cool completely.

Step 8

Sprinkle with sugar before serving.
