Ingredients

The ingredients are:
  • 9 ounces apples (2 eating apples)
  • 8 ounces all-purpose flour (plain)
  • 1 teaspoon baking powder
  • 4 1/2 ounces unsalted butter (chilled, diced plus extra for greasing)
  • 4 1/2 ounces caster sugar (plus extra for springling)
  • 1 lemon, whole (rind finely grated)
  • 2 large eggs (beaten)

How to Make

  • Step 1: Preheat the oven to 375F.

  • Step 2: Lightly grease a 8 inch round springform cake tine.

  • Step 3: Peel and core the apples, cut one of the apples into quarters lengthways, then thinly slice the quarters vertically and set aside and dice the remaining apples and set aside.

  • Step 4: Sift together the flour and baking powder into a large bowl and add the butter and rub it in with your fingertips until the mixture resembles breadcrumbs (alternatively use a food processor and then put mixture into a large bowl).

  • Step 5: Add the sugar, diced apples, lemon rind and eggs to the flour mixture and mix to a firm dough and put into the prepared tin and prick several times with a fork and decorate the top of the cake with the apple slices.

  • Step 6: Bake in the preheated oven for 40 minutes.

  • Step 7: Remove from the oven and leave to cool for 1 to 2 minutes and then unclip and remove the sides, leaving the cake on the base of the tin, then transfer to a wire rack to cool completely.

  • Step 8: Sprinkle with sugar before serving.
