Step by Step Method

Step 1

Finely chop 8 olives & set aside. Cut eggs in half lengthwise & remove yolks. Mash yolks in a small bowl. Add the chopped olives, mayo (or sour cream, if using), parsley, vodka, olive juice & cayenne. Mix well & stuff or pipe mixture into egg whites.

Step 2

Garnish eggs w/whole olives (see pic). Sprinkle w/salt & pepper. Refrigerate until ready to serve.

  • Toothpicks as shown in pic.

Though I don't take many photos of my dishes, your cute serving pic inspired me to try one too. These eggs are really good and different enough to give you a little wow factor - spicy, olivey, and very creative. We used the sour cream and Manzanilla olives, and both were perfect in it.
