"This is how eggs are fried down South, the whites get brown spots, sometimes they use bacon grease or sausage grease depending on which meat you use. This is just basically how to do it, I'm just using 1 egg you can do more, yes these are greasy"

Step 1

After you fry the meat, take out and crack egg into grease that is not to hot, they burn on the bottom if grease is smoking and no one wants that.

Step 2

With your spatula, fan grease over egg and cook to the doneness you like at end some people flip them over and fan grease a little more sprinkle pepper over it, you wont need salt, unless you are mr picky, sigh.

I haven't made eggs like this in years. Not sure why.......this was our standard way of making fried eggs then. I used bacon grease and loved them. Thanks for sharing, Dee, and the walk down memory lane.
