Step by Step Method

Step 1

Preheat oven to 375°F.

Step 2

In medium saucepan over medium-low heat, cook sugar, date and water until mixture thickens, stirring to prevent scorching. Remove from heat, allow to cool, then add vanilla.

Step 3

In large bowl, combine butter, flour, oats, sugar, baking soda and baking powder until it resembles coarse meal. Add milk, then mix until dough is moist enough to roll.

Step 4

Gather dough into ball; roll out on floured surface to 1/8-inch thickness. Cut circles with floured cookie cutter or small glass.

Step 5

Place 1 teaspoon filling on dough circle, then top with another dough circle. Repeat with remaining filling and circles.

Step 6

Place on a greased baking sheet; bake 15 minutes. Cool and serve, storing leftovers in an airtight container.

These are very good. A bit of a sticky toffee pudding flavor to the filling but in cookie form. I cut my dough into squares, but otherwise followed exactly. This is one I’ll keep.
