  • 3/4 cup sugar
  • 3/4 cup pitted dates, chopped
  • 3/4 cup water
  • 3/4 teaspoon vanilla extract
  • 3/4 cup butter, softened
  • 1 1/2 cups sifted flour, plus more for surfaces
  • 1 1/2 cups old-fashioned oats
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 4 tablespoons milk

How to Make

  • Step 1: Preheat oven to 375°F.

  • Step 2: In medium saucepan over medium-low heat, cook sugar, date and water until mixture thickens, stirring to prevent scorching. Remove from heat, allow to cool, then add vanilla.

  • Step 3: In large bowl, combine butter, flour, oats, sugar, baking soda and baking powder until it resembles coarse meal. Add milk, then mix until dough is moist enough to roll.

  • Step 4: Gather dough into ball; roll out on floured surface to 1/8-inch thickness. Cut circles with floured cookie cutter or small glass.

  • Step 5: Place 1 teaspoon filling on dough circle, then top with another dough circle. Repeat with remaining filling and circles.

  • Step 6: Place on a greased baking sheet; bake 15 minutes. Cool and serve, storing leftovers in an airtight container.
