Step 1

In stock pot, Cook bacon until crisp. Remove to paper towels reserving 4 tablespoons of the grease

Step 2

Add in onion and saute until golden

Step 3

Add garlic,cook lightly, then add flour ,cook a little

Step 4

Add stock, milk and potatoes. Season and cook until potatoes are cooked

Step 5

Mash potatoes lightly to have a chunkier soup

Step 6

Add/mix in cheese and sour cream. Simmer until warmed and cheese,melted

Step 7

Taste and season to taste if needed then add bacon back to soup
