Step 1: In stock pot, Cook bacon until crisp. Remove to paper towels reserving 4 tablespoons of the grease
Step 2: Add in onion and saute until golden
Step 3: Add garlic,cook lightly, then add flour ,cook a little
Step 4: Add stock, milk and potatoes. Season and cook until potatoes are cooked
Step 5: Mash potatoes lightly to have a chunkier soup
Step 6: Add/mix in cheese and sour cream. Simmer until warmed and cheese,melted
Step 7: Taste and season to taste if needed then add bacon back to soup
