Step by Step Method

Step 1

Add everything but the roux to a stock pot. Cook/simmer for 2 1/2 hours on low heat.

Step 2

The last 1/2 hour, combine together, the milk, sour cream and flour. Stir into soup. Cool down and allow to thicken.

Step 3

Lastly, stir in vinegar to taste.

This is a delicious and easy-to-make soup with a wonderful tang of vinegar. I soaked two cups of large lima beans overnight (actually for almost 18 hours). Everything cooked to a good tenderness and was already quite thick within 90 minutes. So I made the roux with 1 1/2 tablespoons of flour, 1/2 cup of milk and 1/4 cup of sour cream. That balance was perfect and kept the soup from getting too thick.
