Step by Step Method

Step 1

In large sauce pan heat bacon grease and onions and lightly season.

Step 2

Cook until caramelized.

Step 3

Add paprika, caraway seeds and sauerkraut and simmer while chops are cooking.

Step 4

Dredge chops in seasoned flour.

Step 5

In large skillet, brown chops (both sides)in bacon grease, add more fat if needed.

Step 6

Add sauerkraut that has been mixed with sour cream, adding water as needed.

Step 7

Cover simmer for 15 minutes, checking to see that it's not burning.

Delicious served with mashed potatoes. I used less sauerkraut and forgot the water but otherwise made as directed except I used crisco for the bacon grease. Wonderful dinner! Thanks for sharing!
