Step 1: In large sauce pan heat bacon grease and onions and lightly season.
Step 2: Cook until caramelized.
Step 3: Add paprika, caraway seeds and sauerkraut and simmer while chops are cooking.
Step 4: Dredge chops in seasoned flour.
Step 5: In large skillet, brown chops (both sides)in bacon grease, add more fat if needed.
Step 6: Add sauerkraut that has been mixed with sour cream, adding water as needed.
Step 7: Cover simmer for 15 minutes, checking to see that it's not burning.
