Step by Step Method

Step 1

Combine garam masala, onion, ginger, oil, and cayenne pepper in a medium mixing bowl.

Step 2

Stir in pork, working spice mixture into meat with fingers.

Step 3

Thread the meat onto metal skewers, leaving 1/4 inch between pieces, cover and refrigerate for 1 to 24 hours.

Step 4

Place pork skewer on the lightly oiled rack of the grill directly over medium heat.

Step 5

Grill for 12 to 15 minutes or until the juices run clear, turning once.

Step 6

Meanwhile, stir together yogurt and cilantro in a small serving dish.

Step 7

Cover and chill until serving.

Step 8

To serve, use a fork to remove grilled pork cubes from skewers.

Step 9

Arrange on a tray around yogurt mixture.

Step 10

Serve pork cubes with toothpicks.

Wonderful recipe. I did a couple of things different from the recipe. I combined the curry, green onion, garlic, ginger, cayenne and oil in a zip lock bag added the pork cubes and left it in the fridge for 24 hours. Then just before cooking I threaded the pork on the skewers.. I broiled the skewers for just about 12 minutes turning once. I used Pork button bones which made this a very econonmical recipe that is so good you would be happy serving it to company. The yogurt/cilantor dressing is a must - perfect with the curry flavor. Thanks Derf for a Lovely dinner.
