Step by Step Method
Step 1
Coarsely grate cucumber and pat dry with paper towels, set aside. Whisk the yoghurt, mint, cumin, and 1/4 teaspoon cayenne pepper in a medium bowl to blend.
Step 2
Add the grated cucumber and toss to coat. Season raita with salt and pepper.
Step 3
Cover and refrigerate for at least 2 hours (this can be prepared 1 day ahead, keep refrigerated).
Step 4
Sprinkle raita with a pinch of cayenne pepper and serve.
