Step 1

In a large plastic baggie combine the pork and the marinade and then refrigerate for at least one hour or overnight.

Step 2

Preheat oven to 325 degrees F. Wipe excess marinade off of the pork and then place the pork in a small pan with a rack; cover with foil and roast for 2 hours or until a meat thermometer registers 170 degrees. Let cool completely before slicing.

Step 3

Split bread sections in half lengthwise and spread the mustard on one side of each bread section. Top 4 slices each 1 ounce cheese, 3 slices roasted pork, 1 ounce ham, and 2 pickle slices and then top with other section of bread.

Step 4

In a cast-iron skillet over medium heat melt 2 tablespoons butter and add 2 sandwiches and place another skillet over the sandwiches or use another weight and cook for 3-5 minutes or until golden brown. Remove the weight and flip the sandwiches and then top again with the weight (or skillet) and cook for another couple of minutes or until both sides are golden brown. Repeat procedure with remaining butter and sandwiches. Cut in half before serving.
