Step by Step Method
Step 1
Heat oil in skillet
Step 2
Add onions, bell peppers, and garlic. Saute until vegetables begin to get soft. Add vinegar, cumin, and oregano and cook 1 more minute.
Step 3
Add hominy (with the water) tomatoes and black eyed peas. Bring to a boil.
Step 4
Reduce heat and cover.
Step 5
Cook, stirring occasionally, until vegetables are hot and tender.
