  • 1 can (15 ounces ) hominy (yellow, undrained)
  • 1 can (15 ounces) peas (black eyed peas, undrained)
  • 1 tablespoon red wine vinegar
  • 1 tablespoons olive oil
  • 1 teaspoons cumin
  • 1/2 teaspoons oregano
  • 1/2 cup tomatoes, chopped (optional)
  • 1 cup onions, chopped
  • 1 cup bell peppers (chopped)
  • 1 cloves garlic, smashed

How to Make

  • Step 1: Heat oil in skillet

  • Step 2: Add onions, bell peppers, and garlic. Saute until vegetables begin to get soft. Add vinegar, cumin, and oregano and cook 1 more minute.

  • Step 3: Add hominy (with the water) tomatoes and black eyed peas. Bring to a boil.

  • Step 4: Reduce heat and cover.

  • Step 5: Cook, stirring occasionally, until vegetables are hot and tender.
