Crockpot Sweet & Spicy Balsamic Mango Sliders
"These are the perfect game day or BBQ/potluck party food. They cook all day in the crockpot; so, there is not much to prepare for these. Simply slice some cheese and onions; and, serve on a platter with the mango chutney - for everyone to help themselves. Step by Step Method
Step 1
Chicken ... Set the chicken on the counter, until almost room temperature - you never want to start with COLD chicken. Season the chicken on both sides with the creole seasoning; and, add them to the crock pot.
Step 2
Sauce ... In a measuring cup; add the balsamic vinegar, Italian dressing, brown sugar, jalapeno, shallots, and garlic cloves - and mix. Pour over the chicken; and, stir until everything is combined.
Step 3
Cook ... Cover and cook on low heat, for 4-6 hours until tender. Remove from the heat; and, pull the chick apart. Return to the sauce, mix, cover; and, let it warm back up. Keep on low if using for a pot luck or a party. Remember - all crock pots cook differently. The newer larger ones cook much 'hotter,' than, the older round ones. So, just keep and eye of them. My oval crock pot takes 4 1/2 hrs on low.
Step 4
Bread Note: Now, I like to make sliders; but, you can make full sandwiches, hoagies, or wraps too. Brioche is very good to use in this recipe; but, use your favorite.

Also: You could use a cherry or other fruit chutney; and, your favorite cheese too - you don't have to use a mango chutney. Mango just happens to be my favorite.
Step 6
Rolls/Sandwich ... I don't like to brown them, just lightly warm them. A soft lettuce leaf on the bottom roll, a couple of onion onion rings, warm chicken, cheese; mango chutney; and, top roll. Now, if you want to broil the cheese; by all means, go for it. I don't think it is necessary; but, you can if you want. The warm chicken will lightly melt the cheese; which is all you need. Remember to add as much cheese, onions, or chutney as you want. It's a sandwich, so make it your own. There is no right or wrong. TIP: If the cheese if room temp and thin sliced; it will melt much quicker.
Step 7
Serve and ENJOY! ... I like to stick a toothpick through the top; and, serve family style at a party. Trust me ... THEY WILL NOT last long. Don't forget to change this sandwich up with various breads, cheeses, and chutneys to your tastes. Super easy and Super delicious!
