Step by Step Method
Step 1
Cook pasta in heavily salted boiling water until al dente. Save 1 cup pasta water, to be put into sauce.
Sauce
Step 2
Heat oil in stock pot.
Step 3
Add onions and bell peppers.
Step 4
Cook until lightly browned.
Step 5
Add garlic, green onions and tomato paste.
Step 6
Brown but don't burn.
Step 7
Simmer a bit with a cup of boiling pasta water.
Step 8
Stir and cook adding more pasta water as needed.
Step 9
Add the pasta to the sauce and cook until tight.
Step 10
Season to taste.
