  • Pasta
  • 16 ounces dry spaghetti
  • 6 cups water
  • 1 teaspoon salt
  • Sauce
  • 2 tablespoons oil
  • 1 cup onions, diced
  • 3 green onions, minced
  • 1 cup green bell pepper, diced
  • 1 clove garlic, smashed
  • 6 ounces tomato paste (1 can)
  • 1 cup pasta water, boiling
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente. Save 1 cup pasta water, to be put into sauce.

  • Sauce

  • Step 2: Heat oil in stock pot.

  • Step 3: Add onions and bell peppers.

  • Step 4: Cook until lightly browned.

  • Step 5: Add garlic, green onions and tomato paste.

  • Step 6: Brown but don't burn.

  • Step 7: Simmer a bit with a cup of boiling pasta water.

  • Step 8: Stir and cook adding more pasta water as needed.

  • Step 9: Add the pasta to the sauce and cook until tight.

  • Step 10: Season to taste.
