Step by Step Method
Step 1
In skillet cook bacon. Remove but keep 1 tablespoons of the bacon grease

Add butter and shallots
Step 3
Add garlic cook until lightly browned
Step 4
Add spinach. Wilt down
Step 5
Add nutmeg and stock. Simmer for 15 minutes
Step 6
Use stick blender to make smooth add cream and simmer ,dont boil for 10 minutes
Step 7
Take off heat and stir in cheese
Step 8
Garnish with the reserved bacon
