Step 1: In skillet cook bacon. Remove but keep 1 tablespoons of the bacon grease
Step 2: Add butter and shallots
Step 3: Add garlic cook until lightly browned
Step 4: Add spinach. Wilt down
Step 5: Add nutmeg and stock. Simmer for 15 minutes
Step 6: Use stick blender to make smooth add cream and simmer ,dont boil for 10 minutes
Step 7: Take off heat and stir in cheese
Step 8: Garnish with the reserved bacon
