Step by Step Method
Step 1
Cook rice pasta noodles as per package directions.
Step 2
Meanwhile in a large skillet, bring the olive oil to medium-high heat and cook the onions and garlic until onions are translucent, about 3 minutes.
Step 3
Toss in the spinach and mushrooms and cook until spinach is witlted, about 5 minutes.
Step 4
Remove from heat; add the remaining ingredients, return skillet to burner and heat through.
Step 5
Drain rice pasta noodles, add to skillet and toss with the sauce.
