The ingredients are:
  • 120 grams dry rice noodles (pasta noodles)
  • 3 cloves garlic, pressed
  • 1/2 onion, chopped fine
  • 4 ounces baby spinach leaves
  • 4 ounces mushrooms, sliced
  • 1 cup fat-free yogurt (plain)
  • 2 tablespoons parmesan cheese, grated
  • 2 tablespoons real bacon bits
  • 1 tablespoon oil (olive oil)
  • Salt and pepper, to taste

How to Make

  • Step 1: Cook rice pasta noodles as per package directions.

  • Step 2: Meanwhile in a large skillet, bring the olive oil to medium-high heat and cook the onions and garlic until onions are translucent, about 3 minutes.

  • Step 3: Toss in the spinach and mushrooms and cook until spinach is witlted, about 5 minutes.

  • Step 4: Remove from heat; add the remaining ingredients, return skillet to burner and heat through.

  • Step 5: Drain rice pasta noodles, add to skillet and toss with the sauce.
