Step 1

Place potato and the water in a microwave safe bowl, cover and microwave on high (100%) for 5 minutes or until tender and stand for 1 minute and drain.

Step 2

Transfer potato to a saucepan and mash over moderate heat until almost smooth and then add sour cream, mustard, butter and chives and mash for another 1 minutes or until fluffy and season with salt and pepper to taste.

Super good mashed potatoes. The only change I made is to leave out the mustard (personal preference). The sour cream gives it such a great flavor.

Made as written, using fresh chives, although the microwave cooking time was a little out for me, so I just cooked longer. I was not sure on the mustard but O.M.G..... this going straight to my favourite recipes Pat.... Loved this recipe, just wonderful. Made for the perfect side to our pork tenderloins tonight. Everybody loved this.

Daily Inspiration

We really enjoyed these mashed potatoes. The mustard really adds a nice component to the overall taste of the potatoes without overpowering them. Only change was to use chopped fresh chives.
