  • 400 grams potatoes (floury potatoes such as coliban, cut into 2cm pieces)
  • 2 tablespoon water
  • 85 grams sour cream (3 ounces or 1/3 cup)
  • 1 tablespoon mustard (mild American mustard)
  • 20 grams butter
  • 1 tablespoon dried chives

How to Make

  • Step 1: Place potato and the water in a microwave safe bowl, cover and microwave on high (100%) for 5 minutes or until tender and stand for 1 minute and drain.

  • Step 2: Transfer potato to a saucepan and mash over moderate heat until almost smooth and then add sour cream, mustard, butter and chives and mash for another 1 minutes or until fluffy and season with salt and pepper to taste.
