Step 1: Place potato and the water in a microwave safe bowl, cover and microwave on high (100%) for 5 minutes or until tender and stand for 1 minute and drain.
Step 2: Transfer potato to a saucepan and mash over moderate heat until almost smooth and then add sour cream, mustard, butter and chives and mash for another 1 minutes or until fluffy and season with salt and pepper to taste.
