Step by Step Method

Step 1

Heat oil in a large, deep frying pan over medium-high heat and add bacon and cook stirring occasionally, for 3 to 4 minutes or until golden and crisp and then transfer to paper towel lined plate to drain.

Step 2

Reduce heat to medium and add onion to pan, cover and cook stirring occasionally for 10 minutes or until softened; remove the lid and cook for a further 5 minutes or until golden and caramelised and then add garlic and vinegar and cook, stirring for 2 minutes or until fragrant and then sprinkle over flour and stir to coat.

Step 3

Meanwhile, cook pasta following packet directions, add peas in the last 3 minutes of cooking time and then drain reserving 1/3 cup of the cooking liquid.

Step 4

Add evaporated milk, bacon, pasta mixture, reserved cooking liquid and parmesan to onion mixture and season with salt and pepper and cook, tossing for 2 to 3 minutes or until heated through.

Step 5

Add 3/4 of rocket and toss to combine and serve topped with remaining rocket and extra parmesan

Step 6

TIP - use baby spinach or kale instead of rocket, if you have them in the fridge or simply use fresh herbs instead.
