Ingredients

The ingredients are:
  • 2 teaspoons olive oil (extra virgin)
  • 120 grams bacon (4 rashers middle cut bacon) trimmed and sliced
  • 2 brown onions, thinly sliced
  • 2 garlic cloves, minced
  • 2 tablespoon white balsamic vinegar
  • 1 teaspoon all-purpose
  • 375 grams dried fettuccine pasta
  • 1 cup peas (frozen)
  • 1 can (375 ml) evaporated milk (light and creamy)
  • 1/3 cup finely grated Parmesan (plus extra to serve)
  • 60 grams rocket (baby rocket, see note at end of recipe)

How to Make

  • Step 1: Heat oil in a large, deep frying pan over medium-high heat and add bacon and cook stirring occasionally, for 3 to 4 minutes or until golden and crisp and then transfer to paper towel lined plate to drain.

  • Step 2: Reduce heat to medium and add onion to pan, cover and cook stirring occasionally for 10 minutes or until softened; remove the lid and cook for a further 5 minutes or until golden and caramelised and then add garlic and vinegar and cook, stirring for 2 minutes or until fragrant and then sprinkle over flour and stir to coat.

  • Step 3: Meanwhile, cook pasta following packet directions, add peas in the last 3 minutes of cooking time and then drain reserving 1/3 cup of the cooking liquid.

  • Step 4: Add evaporated milk, bacon, pasta mixture, reserved cooking liquid and parmesan to onion mixture and season with salt and pepper and cook, tossing for 2 to 3 minutes or until heated through.

  • Step 5: Add 3/4 of rocket and toss to combine and serve topped with remaining rocket and extra parmesan

  • Step 6: TIP - use baby spinach or kale instead of rocket, if you have them in the fridge or simply use fresh herbs instead.
