Step by Step Method

Step 1

Bring oil to medium-high heat in a large, heavy bottomed pot.

Step 2

Add onion and garlic and cook until translucent.

Step 3

Add the chicken broth, broccoli florets, thyme, and savory.

Step 4

Bring to a boil, reduce heat to medium and simmer covered until broccoli is cooked.

Step 5

Puree with an immersion blender and add parmesan cheese and cream.

Step 6

Heat through; do not allow boiling.

Step 7

Add salt and pepper to taste and serve.

Engrossed

Delicious easy soup! I made this as directed without the savoury. I also added some garlic. I did make the mistake of adding some salt before the parmesan, not thinking about that adding saltiness too, so it was a little too salty. But it was was delicious topped with shredded cheddar and made a wonderful dip for toasted tuna sandwiches! Made for the Billboard recipe tag game.

Luvcookn

This lovely soup was a snap to put together. I did have to make a couple of substitutions. I used milk with a couple of tbsp of flour for the cream and I used mozzarella for the parmesan which gave it a nice cheesy stringy quality. Also added some freshly steamed broccoli florets at the end for some texture. Thank you for another wonderful recipe Bea!
