Step by Step Method

Step 1

Walnuts ... Add the walnuts to a dry saute pan and bring to medium high heat. Cook just a couple of minutes until you can smell the nuts. Toasting just bring out their natural oils and, they taste better. Once they cool, lightly chop.

Step 2

Beans ... Add the beans to a large saute pan and fill with 1" or so of water, just so the beans are almost covered. I prefer to use a pan vs a pot - the beans cook quicker and more even. Simmer on medium heat until the beans are tender.

Step 3

Finish ... Drain the beans and stir in the orange juice, butter, cranberries, and walnuts. Toss lightly.

Step 4

Serve ... Simply ENJOY!

I think that green beans are my favorite vegetable - I love them cooked any way and this recipe is really good. Amazing what a tablespoon of orange juice, a bit of butter, some cranberries and walnuts can do to just perk the beans up a notch. Excellent recipe Thanks KC 16 August 15 Made again and enjoyed just as much - They look great and taste even better.

Crocus

I planned to make this thinking I had both green beans and an orange. However I had to sub yellow beans and juiced a big mandarin orange - no matter, this was scrumptious. The toasted walnuts and cranberries added such nice flavor.
