Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Grease and flour a 12 muffin pan.

Step 3

Mix flour,sugar,baking powder and soda.

Step 4

Cut in shortening.

Step 5

Stir in juice and egg ( yogurt ) just until mixture is tacky.

Step 6

Fold in cranberries and nuts.

Step 7

Spoon into muffin tin and bake 20 -25 minutes.

I had a ton of cranberries in my freezer from last Christmas that had to be used up so I decided on this recipe, and since this site has the very best recipes with all the best cooks I had no doubt they would be great, I would come here and try recipes with no reviews before I would go to anyother site and try a recipe that already has reviews on it, and know anything I try here would be a winner! I love these muffins they baked out wonderful with a nice flavor, I thank you Shadows1!

mmm only the best cranberry muffins, almost like small scones, I did make mine small, got 18, probably should have made them bigger cus we couldn't stop eating them !! love the tartness of the cranberries and the crunch of the walnuts and just enough sweetness from the orange juice. I chose to use the egg cus i had no yogurt in, i will try the yogurt next time; i also used splenda instead of the sugar. (You might want to add the amount of baking powder into the ingredients, i took a guess and used 1 teaspoon with the 1 1/2 teaspoons baking soda.) These are definately "do again", thanks for posting.
