Step by Step Method

Step 1

In a medium saucepan add olive oil.

Step 2

Add the white onion, sweetened dried cranberries and pistachios, and saute gently over low heat until onion is translucent and slightly fragrant.

Step 3

Add the couscous and the warm cranberry juice cocktail.

Step 4

Stir with a fork to combine, cover.

Step 5

Let sit for 10 minutes.

Step 6

Add the scallions. Fluff with fork.

Step 7

Season, to taste, with salt and pepper. Toss gently to combine.

Step 8

Turn into serving dish.

Step 9

Serve hot.

Great couscous side dish! I used a red onion and omitted the green part of the scallions. Enjoyed the flavor of the pistachios and cooking the couscous in the cranberry juice cocktail. Easy to make and delicious. Made and reviewed for the recipe tag game Think Pink.
